Campbell’s to the Rescue!

Pressed for time? Need to produce dinner  in a nanaosecond for your family but stay on a budget? Your friends at Campbells kitchen can help! Did you know their site is  a vitual stockpile of easy and CHEAP recipies for busy moms and dads? Most are free of “yucky” “weird” ingredients kids frown on, but full of homecooked goodness.  With hundreds of quick and easy meals and coupons galore on Campbells products, you can wallow in this site for hours. I actually keep an e-folder of my favorite recipies from Campbells. Nearly all recipies take minimal prep time, and are affordable. I get sick of seeing 30 minute meals that require $30.00 of ingredients. This recipie below, with two coupons, and three pieces of leftover chicken, cost me only $4.80 for extra items, (soup, picante sauce and tortillas). Even my super picky youngest did not recognize leftover chicken disguised in her cheesy quesadillas.  Picante Chicken Quesadillas
From: Campbell’s Kitchen
Prep: 15 minutes
Bake: 5 minutes
Serves: 4

Ingredients:

1 can (10 3/4 ounces) Campbell’s® Condensed Cheddar Cheese Soup
1 1/2 cup chopped cooked chicken  
1/4 cup Pace® Picante Sauce
8 flour tortillas (8-inch), warmed

Directions:

 Heat the oven to 425°F.  Stir the soup, chicken and picante sauce in a medium bowl.

Place the tortillas onto 2 baking sheets. Spread 1/4 cup soup mixture on half of each tortilla to within 1/2 inch of the edge. Brush the edges of the tortillas with water. Fold the tortillas over the filling and press the edges to seal.

Bake for 5 minutes or until the filling is hot.

Serving Suggestion: Serve with Mexican-style rice mix and chocolate chip cookies for dessert.
